The nutmeg is clearly marked as "optional". Although I'm surprised even 8 pounds of nutmeg managed to overwhelm the 4 pounds of cayenne pepper.

If you like, you can double the cinnamon broth to ΒΌ teaspoon to take some of the edge off the nutmeg.
