2 cups chopped, seeded watermelon
¾ cup chopped sweet onion (e.g., Vidalia, Walla Walla, etc.)
¾ cup black beans, rinsed and drained
¼ cup chopped seeded jalapeños
¼ cup chopped fresh cilantro
1 TBSP brown sugar
½ tsp salt


  1. Mix in bowl

  2. Refrigerate, covered, 1 hour. Stir and serve

  3. Try to figure out what to do with the leftover ½ can of black beans
